Artichoke Chicken Pizza

Bake Pillsbury® pizza crust topped with chicken, artichoke hearts and Progresso™ Recipe Starters™ cheese sauce – dinner that’s ready in 30 minutes.

  • Ingredients

    • 1 can (13.8 oz) Pillsbury® refrigerated classic pizza crust
    • 1 can (18 oz) Progresso™ Recipe Starters™ creamy three cheese cooking sauce
    • 2 cups chopped deli rotisserie chicken
    • 3 jars (6 to 7 oz each) marinated artichoke hearts, very well drained, coarsely chopped
    • 2 cups shredded mozzarella cheese (8 oz)

    Garnishes, If Desired

    • Thinly sliced halved red onion
    • Chopped fresh basil or parsley
  • Directions

    1. Heat oven to 425°F. Spray large cookie sheet with cooking spray. Unroll pizza dough on cookie sheet; press into 15x12-inch rectangle. Bake 8 to 10 minutes or until light golden brown.
    2. Spread 1/2 cup plus 2 tablespoons of the cooking sauce evenly over partially baked crust (more sauce will make crust soggy). Sprinkle with chicken, artichokes and cheese. Bake 10 to 15 minutes or until crust is golden brown. Sprinkle with onion and basil.
    3. Meanwhile, heat remaining sauce in 1-quart saucepan until hot; serve with pizza as dipping sauce.

      I will rate this 4 stars..followed directions and it was a big hit at the party. I used deli roasted chicken as suggested and added various spices to the cut up chicke just to perk it up. I did not add red onion, but will add a bit next time around. Several people have asked for the recipe...it's a winner! P.S. There is snough sauce in the can to make 2 pizza's...otherwise save the remaining sauce and add to cooked rice.

      Okay...so I'm going to rate this in the middle of the road. I made this and didn't see, to bake the crust until after I put the sauce on...so that got quickly topped with a colby jack shred and in the oven it went...then attempted it again the correct way.(and that goof-up was rather tasty! and got rave reviews). I will have to say, I would rather see the exact measurement of the amount of sauce being used in the ingredients list and not in the directions, because of being able to prepare with what to do with the leftovers, that I had...luckily for me, I used the other part with the Cheddar-Parmesan Puffs(which we LOVED!) After baking the crust, and topping with the sauce, chicken & artichokes. I found that 2 cups of homemade rotisserie chicken was way to much as for 3 jars of artichokes. I only used 2 jars because my pizza was way full with toppings and I only needed 1 1/2 cups of shredded cheese. 2 of my girls loved the dickens out of the pizza, I and another kid thought it was okay, needed something or some sort of kick in flavor. My son and husband didn't care for the pizza but did try it to be fair. Might have to see what I can do to tweak it better. Thanks though, the recipe was a hit or a miss with my family and friends.
