Chorizo Beans and Rice

This skillet dinner has it all – sausage, rice and Progresso® beans made using Progresso™ Recipe Starters™ mushroom sauce – ready in 25 minutes.

  • Ingredients

    • 12 oz bulk chorizo sausage*
    • 1 can (18 oz) Progresso™ Recipe Starters™ creamy portabella mushroom cooking sauce
    • 1 can (19 oz) Progresso® red or dark red kidney beans, rinsed, drained
    • 1 1/2 cups uncooked instant white rice
    • 1/2 cup sliced green onions (8 medium)

    Garnishes, If Desired

    • Crumbled cojita cheese
    • Cilantro leaves
  • Directions

    1. In 12-inch nonstick skillet, cook sausage over medium-high heat 6 to 8 minutes, stirring occasionally and breaking up sausage with spoon, until thoroughly cooked. Drain on paper towels.
    2. Stir in cooking sauce, 1/2 cup water and the beans; heat to boiling. Stir in rice and green onions; remove from heat. Cover and let stand 5 to 7 minutes or until liquid is absorbed. Sprinkle with cheese and cilantro.

      My husband and I had this for dinner tonight. It's super simple. One dish and it's done. Delicious! Loved the addition of queso fresco and cilantro
