Creamy Mushroom Risotto

  • Ingredients

    • 2 tablespoons butter
    • 2 cups coarsely chopped fresh portabella mushrooms
    • 1 cup uncooked Arborio rice or regular short-grain white rice
    • 1 1/2 cups Progresso® beef-flavored broth (from 32-oz carton)
    • 1 can (18 oz) Progresso™ Recipe Starters™ creamy portabella mushroom cooking sauce
    • 1/2 teaspoon dried thyme leaves

    Garnishes, If Desired

    • Shredded Asiago or Parmesan cheese
    • Freshly ground black pepper
  • Directions

    1. In 4-quart saucepan, melt butter over medium heat. Cook mushrooms in butter 3 to 4 minutes or until softened. Add rice; cook and stir 2 minutes.
    2. Add broth; heat to boiling. Boil 2 minutes. Stir in cooking sauce and thyme; heat to boiling. Reduce heat to medium-low; cover and cook 15 minutes, stirring twice. Remove from heat; let stand about 5 minutes or until rice is tender. Sprinkle with cheese and pepper.

      this is a very teasty dish but doesn't fit in with any kind of weight control that i know of.lots of fats

      I recently discovered mushroom risotto and thought I'd give this recipe a try. It's definitely got good flavor and was very easy to make. I'm not a big thyme fan, so I would probably make it with 1/2 what the recipe calls for next time. Great side dish!

      This turned out great. Husband said it needed more cheese, but that's because he thinks everything needs more cheese. I tweaked the recipe by adding some dried onion, garlic powder, and black pepper (while cooking the dish instead of a garnish) and it rounded out the flavor nicely. I didn't dice my mushrooms, either, because I prefer a big chunky mushroom in my dishes.

      Texture was OK, but had an off flavor, could by my dried Thyme was too old. Will try again in the stroganoff to see if I still get that funny back note flavor
