Enjoy this Spanish-style skillet dinner featuring chicken, rice, Progresso® black beans and Green Giant® corn – made using Progresso™ Recipe Starters™ cooking sauce.

  • Ingredients

    • 4 boneless skinless chicken breasts (about 1 1/4 lb)
    • 1 cup converted or regular long-grain white rice
    • 2 tablespoons Old El Paso® taco seasoning mix (from 1-oz package)
    • 1 can (18 oz) Progresso™ Recipe Starters™ creamy roasted garlic with chicken stock cooking sauce
    • 1 can (15 oz) Progresso® black beans, drained, rinsed
    • 1 cup Green Giant® Valley Fresh Steamers® frozen corn

    Garnishes, If Desired

    • Sliced ripe olives
    • Sliced green onions
  • Directions

    1. Sprinkle chicken breasts with salt and pepper to taste. In 12-inch skillet, heat 1 tablespoon vegetable oil over medium-high heat until hot. Cook chicken in oil 4 to 5 minutes or until browned, turning once. Remove from skillet; cover to keep warm.
    2. Add rice and taco seasoning mix to skillet; stir to mix well. Stir in cooking sauce and 1/2 cup water. Heat to boiling; cook 5 minutes, stirring frequently. Stir in beans and frozen corn; heat to boiling.
    3. Return chicken to skillet. Reduce heat; cover and simmer 20 to 25 minutes or until liquid is absorbed, rice is tender and juice of chicken is clear when center of thickest part is cut (at least 165°F). Sprinkle with olives and green onions.

      This was great! It did take a LONG time to cook the rice so next time I will take the suggestion of others and cook the rice first. I also added a jar or black bean and corn salsa and that added to it I think. It had great flavor and very versatile. You could eat it plain, on a salad, on chips or etc. My in-laws were over when I made it and it was all gobbled up and I was asked to make more tomorrow!!

      Good, but a little tasteless. I used steam in the bag rice and added some salsa instead of the water. Cooked quickly. We served it inside tortillas. It was good with cheese and sour cream added.

      We loved it:) After reading the other reviews I decided to cook my rice in a rice cooker first. I diced up the chicken and mixed everything together. I served it over Tortilla Chips and added shredded cheese, sour cream, and salsa. Yummy

      This is sooo not the recipe that they used on The Chew! A baby could make this with all the pre-prepared ingredients. I was looking for the actual recipe they used on the show, which they always say will be posted.

      Flavor was really good, rice was a little under-cooked but all the liquid was gone- will use a whole cup of water next time.

      My family loved this. I too added diced zesty tomatoes. This is a keeper even with the sodium being high.

      Just made this for dinner for my family. They loved it!!! It was quite a bit different in flavor then mexican rice for them, but all enjoyed. I took a star away because, I had an issue with getting the rice to the tender state it needed to be. Even after following to a T, I ended up adding 3/4 cup more water and let simmer longer. Other then that, it the recipe was enjoyed. And on this note, my 4 chicken breasts were huge, soo I had to make a separate batch additional in another pan(minus the additional chicken) to accomendate 6-8 people rather then the 4 servings. And it was plenty with a little leftover for lunch. TY

      This is really good! I also added diced tomatoes and instead of 1/2 cup of water I added 1/2 cup of the tomato juice from the can.
